Looking for a fiction book that leaves you with something to think about

Hi! I just got back into reading again and I've been reading the ACOTAR series, and it's just making me long for something that has more depth. Like I'd love a good book that leaves me with something to think about when I finish it or like an extreme plot twist or clever writing. I just want to finish a book/series and be like "holy sh*t." I'm not sure if this makes much sense lol. I prefer fiction, I like fantasy but I don't enjoy the "everyone's hot and banging eachother" type of fantasy.
