Stormlight (Way of Kings) is better, but you will also get more out of the series if you’re already familiar with Sanderson’s other Cosmere stories.
Both have pacing issues (common with a lot of Sanderson’s books, though the Stormlight books tend to drag more because they’re longer), and Mistborn is overwritten, especially the action sequences.
Of the two, I’d pick Mistborn, but my dark horse recommendation for getting into Sanderson is actually *Warbreaker*. It’s a standalone, has fewer pacing issues than Stormlight, and is better-written than Mistborn or Elantris (the other commonly-recommended starting point).
