Better than the Kingkiller chronicles by Patrick Rothfuss
These two books live rent free in my brain, I even had a dream about the storyline. Of course everyone who read the series knows that the third book may never appear. I’d love another series that is as amazing AND is complete.
It’s a little darker but have you tried Joe Abercrombie’s The First Law trilogy? The first book is The Blade Itself.

Have you checked out the two books in the same universe, The Slow Regard of Silent Things (about Auri), and The Narrow Road Between Desires (about Bast)?

Three great trilogies in a vaguely similar style/tone:
The Black Iron Legacy by Gareth Ryder Hanrahan
Eisenhorn by Dan Abnett
The Tyrant Philosophers by Adrian Tchaikovsky

The first one is The Curse of Chaplin by Lois McMaster Bujold. Slightly slow beginning, but the story is unique without being too complicated to follow.

Have you read any Brandon Sanderson? Warbreaker is a good standalone if you want to give it a try

Have you read, “The Dark Star Trilogy” by Marlon James? The first book is, “Black Leopard, Red Wolf.” The story does start slowly and the narrative does take some getting used to, but the story is brilliant! The third and final book has been confirmed and is being written as we speak.
