I am a big fan of Neil Gaiman's American Gods and also Lev Grossman's The Magicians series. I absolutely love the audiobooks for both of these stories. I think the prose of both authors is very poetic at times while still having a grounded often punctual style when things get serious.
I grew up on Harry Potter and Tolkein, and also have read all of the Song of Ice and Fire books, but I am very overwhelmed by the fantasy section at the book store. There's just so much there, and a few books I have tried seem just a bit corny.
I started listening to The Dresden Files books and although they are corny I do like them, but am looking for more stories with as much depth as Magicians, American Gods, and Game of Thrones. I like a universe I can really chew on and live in, what series would some of you reccomend?

The Realm of the Elderlings by Robin Hobb consists of 16 books in total, multiple trilogies and a tetralogy. Her prose is lyrical and immersive; it will bring out the inner child in you whilst simultaneously crushing your spirits.
You have room in your heart for corny? It’s okay for the prose to be a bit silly so long as it’s cleverly executed? I recommend Jasper Fforde: His Thursday Next series is very much about what it means to love books. The Shades of Grey books are a bright and cheerful dystopia. Song of the Quarkbeast is a young adult treasure trove of quirky references and coming of age.
