Elizabeth Moon has two I like – The Deed of Paksennarrion, and The Serrano Legacy.

Not really adult, more YA, but Tamora Pierce is hands down one of my favourite authors. Her fantasy books set in the Tortall universe are all excellent. I think they were the first fantasy books I ever read that featured FMCs and talked about everything to do with periods, fighting in a man’s world, etc. It was eye-opening for me in such an exciting way. I still think about some of those books, and I first read them almost 2 decades ago now.

Martha Wells, NK Jemisin, Robin Hobbs, Mercedes Lackey, Elizabeth Moon, and Anne Leckie have all written multiple series, any of which I would recommend.
