In 'Lot 49', there's a subplot where the main character is investigating why certain editions of a book/play has a different 'final line' than the others. In '2666', there's a portion where a couple of scholars are translating the works of an obscure German writer while hunting down his identity. In 'If On a winter's..' readers have noticed that some part of a book is missing, and are instead printed on a different title.
I'm looking to find more like this. Preferably one filled with intrigue and mystery, and eventually opens up into a more grandiose plot.
