I think I was spoiled by reading Pratchett's Witch series as now I am looking for witch books with different spins on tropes such as the Maid, Mother Crone, and the witches are more than just seductive homewreckers out to ruin a man's day.
Basically, I want a story where witches are humanised / people first

I find Leigh Bardugo and his Grisha series is very interesting. He draws on Russian folklore and while not specifically described as witches they do fit the bill. I also liked his short story “The Witch of Duva”.
The Once and Future Witches by Alix Harrow or if you want something a little more quirky (think Practical Magic meets Gilmore Girls) The Unfortunate Side Effects of Heartbreak and Magic by Breanne Randall.
