Aside from Bill Bryson, here are some I have enjoyed:
*Entangled Life: How Fungi Make Our Worlds, Change Our Minds & Shape Our Futures* by Merlin Sheldrake
*Eating to Extinction: The World’s Rarest Foods and Why We Need to Save* Them by Dan Saladino
*The Insect Crisis: The Fall of the Tiny Empires That Run the World* by Oliver Milman
*The World in a Grain: The Story of Sand and How It Transformed Civilization* by Vince Beiser

lol, I came to the thread to suggest Bill Bryson but you guys have it covered. At time of writing, most other comments are Bill Bryson.
So I will suggest, The man who mistook his Wife for a hat stand.

Basically all of Erik Larson’s books fit the bill, non-fiction page turners. “Devil in the White City” is a good one to start with about the Chicago World’s Fair and a serial killer.
