I’ve just started exploring this genre and I’m loving it. I’ve read “gone girl” and “woman in the window” and I want a book that has such a great plot twist it will force me to close the book for a second and think. I just don’t want fantasy.

Tender is the Flesh. It is a really great book, but can be a lot to get through if you don’t have the stomach for it. But that ending…ouch.
Fingersmith. I have never been so shocked by a plot twist in my life, including Gone Girl.

Idk about “the biggest plot twist ever”, but The Dead Zone by Stephen King has a wild plot twist at the end. I doubt anyone sees it coming.
