I’ve read ASOIAF, The Witcher, Malazan, LOTR, The Faithful And The Fallen, The Dagger And The Coin.
I like bleak / grimdark, but it’s not a necessity. I like expansive worlds. I like real feeling characters and multiple POVs
No YA please

*Black Company* by Glenn Cook might work
My favorite fantasy ever is the Curse of Chalion series by Lois McMaster Bujold. Such a rich world and full of complicated characters, lots of grim reality but with satisfying endings. I haven’t read it yet, but I think the Adventures of Amina el-Sirafi would fit the bill!
The Demon Cycle series by Peter V Brett. First book is The Painted Man (or The Warded Man, depends on where you live). Dark world and themes, mature content, one of those books that I stayed up all night reading
Anything by N.K. Jemisin, Nnedi Okorafor, Margaret Killjoy! Those are my most recent faves.
The Silmarillion is suuuper dark and not as hard as everyone says it is and is peak Tolkien
