That’s an almost impossible question to answer without knowing you, because “that one book” is different for everyone. Like, for me I was 8 or 9 and it was “The Giver” by Lois Lowry. But there’s as many answers as there are readers.
Other than that, I’d suggest something like really good YA books? *His Dark Materials* trilogy comes to mind.
More on the adult side, I would say Stefan Zweig or Maupassant short stories are a good way to get into “litterature” because they’re quite intense, interesting and also “bite sized” for new readers.

What type of media do you consume that aren’t books? (Tv shows, movies, video games, etc)
I always try to suggest something in the same genre of the other media people like. For example, Star Wars has amazing novels within the universe, there’s endless fantasy tie-ins, The hunger Games, and so many romance novels have become movies lately like Red, White and Royal Blue.
It really depends on what exactly you’re looking for!
