Most of the fantasy books I find are more modern fantasy, and I’m looking for true high fantasy, with extensive worldbuilding. My favorite worlds are of course LOTR/Hobbit and the world from The Black Jewels trilogy. If it comes with a map and a wiki is needed to fully understand it, I’ll love it.
Bonus points if the book takes influence from a non-European culture, but it’s not required.

Sounds like Wheel of Time is your perfect series. Very extensive world building, lots of non European cultures and influences.
Also happens to be my favorite series of all time but that’s anecdotal
It’s classified as Science Fiction but there is a fantasical/mystical element to Dune by Frank Herbert. It has an appendices. As you get deeper into the stories, the more it is influenced by Middle Eastern/Islamic culture while also having very European royalty/Christian tones.
