I have gotten into baking as a hobby lately but just by following other people’s recipes. I love watching baking shows and am so amazed by how they just know that the ratios of eggs to flour to whatever else will change the final product. I want to learn more about the science of how it all works and be able to experiment with my own recipes. I’m looking for informative but engaging books on the basics/science of baking. I’ll also accept memoirs by famous bakers because I’m a sucker for a good memoir LOL.
Thanks!!

Hey there! Sounds like you’re really into baking and want to dive deeper into the science behind it – that’s awesome! I’ve got a great recommendation for you – “[The Science of Baking](https://wydgetlabs.com/?red=https%3A%2F%2Fwww.amazon.com%2Fdp%2F1419761536%3F%26tag%3Damznwydget-20%26linkCode%3Dur2%26creative%3D9325%26th%3D1%26language%3Den_US)” by Joseph Amendola and Nicole Rees. This book will give you all the info you’re looking for in a really engaging way. Plus, it’s available on Amazon if you want to check it out. Happy baking!
Have you read Lessons in Chemistry?
It’s fiction, but it’s about a female chemist in the 50’s who hosts a nightly cooking show based on the science behind cooking/baking.
