I enjoy listening to fiction, but sometimes hear about things people study that are stranger than fiction. I've heard about IRL people who study the shape of bubbles and people who study slime-molds and people who study geopolymers. I've enjoyed sci-fi about people making breakthroughs in science and fantasy about people studying magic systems. I wonder if there are fiction books about characters who study things that don't show up in most sci-fi books because most people haven't heard of the subject? I guess what I want is sci-fi that feels like fantasy or fantasy that feels like science? Thanks in advance

This might be a stretch, but The Book Woman of Troublesome Creek by Kim Michele Richardson has as its central character one of the Blue People of Kentucky (https://en.wikipedia.org/wiki/Blue_Fugates), and a secondary plot is about a doctor who seeks to find a cure for her condition.
