Does The Wager by David Grann count? Historical nonfiction around mid 1700s about a fleet hunting a Spanish ship carrying gold. One of the ships wrecks and the story is just getting started. It’s a great read!

The Hornblower series. And/or Bolitho.

Dead Wake (sinking of the Lusitania) by Erik Larson
The North Water by Ian McGuire (Whale ship in the north Atlantic, beautiful writing, very dark)
Simple Courage: The True Story of Peril on the Sea by Frank Delaney
Maybe obvious, but a really good one is The Hunt For Red October by Tom Clancy
