I’m really trying to get into reading more, particularly on an evening before bed.
I very much enjoy warrior/ medieval style stories, and like the typical stuff such as Game of Thrones, The Witcher, LOtR.
Any suggestions would be great as when I go to a book store I have no idea what to look for.

Christian Cameron does great historical fantasy books, has several series. My recommendation is the Chivalry series, the first book is Ill-Made Knight. The Series is set from 1340s just before the Battle of Poitiers for a few decades after in Italy and other places. Lots of fun and excellent fight scenes.
Arthurian retellings can be a good thing to look out for. Recently I enjoyed Spear by Nicola Griffiths, but there are lot of retellings and they often blend medieval history with fantasy.
For quality medieval historical fiction, Ellis Peters aka Edith Pargeter is unparalleled but perhaps not enough fantasy fighting for your brief.
