Some examples that come to mind are things like; Folk and Mischief Acts both by Zoe Gilbert; Dreams Underfoot by Charles de Lint; or at a push Thirteen Storeys by Jonathan Sims.
Open to any genre, although I don’t like Romance or YA genres ideally. Thanks in advance.

Marrying Friends by Mary Rechner is a novel-in-stories
Ghostwritten by David Mitchell
The Things They Carried – Tim O’Brien
Honeycomb by Joanne M Harris is chaptered and spaced out like a massive collection of random fairytales, but the entire thing is connected into a single plot. You really start to see the bigger picture and into the thick of the plot the further you go. Also, it’s beautifully illustrated by amazing artist Charles Vess!
