I haven't read the GoT books, but watched the first 5 seasons a couple of times, so I do not wish to read it as I'm quite familiar with the overrall story. However, I do wish for some fantasy or sci fi that compares in terms of political intrigue, world building and general character depth and evolution. I've read Broken earth and mistborn trilogies, and found that they didn't scratch that itch. Somewhat due to the latter seeming a bit too YA for my taste. I'd love to read some 'mature' fantasy. I haven't read any dark fantasy yet, so I'd be interested in that as well if it coheres with the aforementioned 'wants'.
