Books about the history of healers/herbalists being accused of witchcraft

I’m looking for writing – fiction and nonfiction, short-story, novel, or long-form article, really anything – that talks about the history of healers and herbalists being accused of witchcraft. Ideally, this is the direct experience of a protagonist in a fictional piece or it’s the main subject in a piece of nonfiction. But, I’m also open to pieces where the emphasis may be on something else but healing/herbalism/witchhunting are still meaningfully present. Thanks for any and all recommendations!
