EDIT- I’m 90% sure “Whether Change: The Revolution Will Be Weird” edited by Scott Gable and C. Dombrowski has “Salt Water to Wine” by WC Dunlap, which is a post-apocalyptic short story about a Catholic priest who’s also trans woman looking for missing children.
