Stephen King: Bag of Bones, The Green Mile, Revival, The Outsider (plus the majority of his short stories, but ones that stick out especially are The Jaunt and Strawberry Spring).
Additionally, while not a book, but his Dark Tower series’ ending was totally not at all what I was expecting, so I think that fits the bill admirably.

Shutter Island! I found this one on a similar thread a few years back and it didn’t disappoint – just don’t read spoilers ahead.

Requires two full books to get to, but Gideon the Ninth and Harrow the Ninth by Tamsyn Muir contain the only twist that I never saw coming at all and still completely made sense once it happened.
They are the first two books of the Locked Tomb series, an award-winning sci-fi fantasy horror mixture about lesbian space necromancers.
The twist is absolutely bizarre and brilliant and heartbreaking and I can’t say much else without ruining it.
