Looking for a boo about hunting a beast/monster

I’m looking for a book about the hunt of a beast/monster/animal. Preferably pre-20th Century, if possible. Also, I would prefer the book to be solely focused on the hunt of one animal, but if it’s a self-contained story within a larger work, that works too. I also don’t mind if it’s fiction or non-fiction.
