I've read the classic ones like Tailchaser's Song, Watership Down is on my list, Warrior Cats, etc. I'm looking for something with anthropomorphized animals, but only in the sense that they look as they do in real life but with societies and languages and stuff. No furries.

Redwall
The Wind in the Willows by Kenneth Grahame.
The Lion, the Witch, & the Wardrobe by CS Lewis, Winnie the Pooh by AA Milne, The Neverending Story by Michael Ende, The Golden Compass by Philip Pullman, & The Last Unicorn by Peter S. Beagle
Silverwing series by Kenneth Oppel and Guardians of Ga’Hoole by Kathryn Lasky are ones I remember enjoying years ago, though they are children’s books (I know Warrior Cats can get dark, but I would say these are on a similar level). The Redwall series by Brian Jacques is excellent and full of wonderful prose, though also for younger readers. Not sure of the age range you’re looking for!
