Not a graphic novel, but a book that has a/a few random doodles/graphic but is generally a text based book.
Best example I can think of would be modern 'instagram-poetry' books like rupi kaur or that one venn diagram in the fault in our stars

they might not be simplistic or doodle-ish enough but both house of leaves and extremely loud and incredibly close are books that play with more dimensions of the book than usual. otherwise lots of fantasy books and ya fiction will have doodles, maps, character sketches, etc.
