I don’t know how to explain it, but Harry Potter — and many other middle-grade fantasy series — have lots of subplots and prioritize worldbuilding and character exploration. Harry Potter isn’t so centric to the main plot that it’s the only focus (probably because in a lot of the books, Harry doesn’t know what’s going on for a decent portion of it haha). Are there any YA or A fantasy books/series that are like that? The only ones I know of are middle-grade.

      What is “middle-grade”?

I looked it up. If I’m going by strict definitions you should read the Lord of The Rings series next. Could be the wrong answer or the right one.
