My fiancé are going on a road trip to Colorado, the drive there is ~12 hours and so is the drive home. We thought of listening to an audio book while traveling and was hoping for some suggestions. We are both pretty big fantasy readers I just finished all of GOT and she just finished the Tolkien universe. What do you guys suggest?

Historical political mystery, not fantasy, but The Tiger in The Well is a great listen – especially if it’s read by Anton Lesser. I remember listening to it one summer road trip with the whole family, all with different tastes in books, and we ended up sitting in car parks still listening, because nobody wanted to stop for long enough to get groceries.
The audiobooks for the Chronicles of St Mary are quite fun. It’s a time travel adventure series about a group of historians who travel to the past to observe history. It’s sounds academic but is really fun. There are a bunch of books in the series but I’d recommend starting with the first.

Project Hail Mary is not fantasy, but is fantastic.
I suggest Riyira Revelations by Michel J Sullivan or Unconventional Heroes by LG Estrella.
Sullivan is more traditional. Revelations can be a little tropey, but the rest of the “World of Elan” books definitely aren’t. The MCs in Revelations have one of the best bromances.
Unconventional Heroes is hilarious. It had a found family vibe and the characters are very endearing. It follows:a necromancer named Timmy, a pyromaniac elf, Timmy’s 9yo apprentice Katie who constantly talks about how she’ll overthrow Timmy when she becomes an adult, and a bureaucratic who’s afraid of everything and fights bad guys by throwing frying pans at them.
