Probably a different kind of behind the scenes in the book industry but the Thursday Next series by Jasper Fforde is great. The main character literally goes inside fiction and sees stories being built and maintained from the inside. The first book in the series is called The Eyre Affair and involves the literal kidnap of Jane Eyre from her book
