I'm thinking of something like Shutter Island or Life of Pi, some book where you're thinking you're reading a story but the twist turns the whole plot upside down.
Something possibly well executed and satisfactory, not an unbelievable or supernatural or i-couldnt-see-it-coming whodunnit cheap twist

The Jade Setter on Janloon by Fonda Lee – a stand alone novella that takes place in the same world as her Jade City series, though you don’t need to have read the main series to enjoy the novella. You start out thinking it’s just a fun little story about a jeweler’s apprentice trying to locate a piece of stolen merchandise but by the end you realize it’s so much more than that. While I don’t think most people would see the conclusion coming, it’s less in a cheap trick way and more of a “oh god I never would have thought to take that into account, but now that you mention it, I see how that would happen,” type way
Warbreaker by Brandon Sanderson – things not being as they first appear and the idea of reversals generally is a major theme of the book
