Which is frustrating because every mainstream novel nowadays seems to be a weird power fantasy. I’ve always found sad books or books featuring “normal” people (and not super rich/smart college kids or people with magical powers) to be incredibly boring and demoralizing. Am I the only one? I feel uplifted when I read a book about a normal person without a bunch of pedigree or magical powers where they still persevere and have a good outcome.

When reality is sad people crave power fantasy.
If you still like fantasy but don’t want a “power fantasy” you should check out The First Law series by Joe Abercrombie. The story is set up in a way to make you believe it’s a typical fantasy story but the author breaks the usual tropes people are used to. The characters are all flawed and no one is the hero.
