Maybe “Watership Down” by Richard Adams. It has some specifically English (as in really only used in the UK) words but the language is not complicated. It was originally a story that the author wrote for his two daughters and about rabbits but don’t go thinking it’s a children’s book. It’s a gripping adventure tale written in an adult style. Partly recommending this book because it’s my favorite novel of all time lol.

These books were pretty easy to read for me as a non-native English speaker.
