If you’re into both fantasy and philosophy, give R Scott Bakker and his The Prince of Nothing trilogy a look. There’s also a four book sequel series called The Aspect-Emperor.
The Lies of Locke Lamora by Scott Lynch is great.
The First Law by Joe Abercrombie lacks the world-building of Game of Thrones but has wonderful characters and great dialogue with plenty of dark comedy.
Daniel Abraham’s The Dagger and the Coin is worth a look as well, along with The Long Price Quartet. Abraham also co-authors the excellent sci-fi series The Expanse, with the other writer being George RR Martin’s former assistant, Ty Franck.
The Traitor Baru Cormorant by Seth Dickinson was one of my favorite books I read last year, and has a ton of political maneuvering. There are also two sequels with, I believe, at least one more on the way.
Perdido Street Station by China Mieville is another novel worth checking out, and has two sequels. I’m reading The Scar, the second book in his Bas-Lag series, right now.
Robin Hobb and her Farseer Trilogy is great as well, and there are like a dozen other books set in the same world.
Finally, if you want to read one of Martin’s big inspirations for Thrones, check out Memory, Sorrow, and Thorn by Tad Williams.
