I know Empire of The Vampire has illustrations, and lots of middle grade does (or at least it did when I was a kid. I don’t know for sure that it still does)
What other novels have illustrations included?
* The Foundling’s Tale series by D. M. Cornish. Young adult dark fantasy with beautiful illustrations by the author.
* The Leviathan trilogy by Scott Westerfeld. Young adult historical fantasy with illustrations by the artist Keith Thompson. You can see some on Thompson’s website. To me these felt like they were on the younger end of young adult, so kind of in between middle grade and YA.
* Twisted Metal by Tony Ballantyne. I have an audiobook of this, but I have read that there are illustrations in the text version. Adult sci fi.

Beware Of Chicken by CasualFarmer has artwork in all three ^(so far, more are on their way) books.
The series is a twist on the Martial Arts/Xanxia series with the main character deciding he doesn’t want to be an immortal martial artist, so he leaves and becomes a farmer.
Then his Rooster starts demonstrating it is learning martial arts and becoming sentient…
As is his cat… and his two pigs… and a rat…
