I really enjoy apocalypse books, whether they be post apocolyptic or a mix of pre and post. Some I’ve read and enjoyed:
The Stand
The Twelve trilogy
The Girl with All the Gifts
The Walking Dead books
One Second After trilogy
Station Eleven
Wayward Pines trilogy (kind of fits in this category I think lol)
I’ve read more but these are the ones I can think of off the top of my head! I prefer ones that have some sort of survival aspect – Station Eleven was really good but less action than I’d like. It doesnt have to have monsters/zombies but not opposed!

Oryx and Crake (and the rest of the MaddAdam trilogy) were very good. The Road by Cormac McCarthy, Parable of the Sower by Octavia Butler were all good.
Swan Song is fantastic. Also, Alas, Babylon.
The Passage by Justin Cronin is pretty epic.
The Dog Stars by Peter Heller is beautiful.
The Commune books by Joshua Gayou are a great ride and there’s a lot of them.
If you don’t mind a lighter look at post apocalyptic life Benjamin Wallace’s Duck and Cover series is fun.
Annihilation by Jeff Vandermeer? I haven’t read it (not yet, but soon!!) but it fits the topic and people say it’s awesome soooo
Parable of the Sower by Octavia Butler is amazing.
A lot of Phillip K Dick also scratches that itch for me.
