There are myriad books out there that have humorous elements or dialogue, but far fewer (that I have found) where humour seems to be a central element of the book and/or aspect of the author’s style.
Catch 22, A Confederacy of Dunces, and Based on a True Story (Norm Macdonald’s pseudo autobiography) are three books that genuinely had me in stitches while reading them. I’m hopeful that the wonderful folks on this sub might be able to direct me towards some other titles that will illicit a similar reaction!

Hitchhikers guide to the galaxy by Douglas Adams
I thought cryptonomicon was hilarious
The Dog of the South by Charles Portis (and all of his other fiction)
PG Wodehouse.
The Serge A. Storms series by Tim Dorsey.
Squeeze Me by Carl Hiassen. You will definitely be laughing out loud.
If you’re open to nonfiction, I liked all of the the books you mentioned and loved A Walk in the Woods. One of the few books to actually make me laugh out loud.
Kurt Vonnegut can be very funny as well. My favorite was God Bless You Mr. Rosewater.
