For non-fiction: Dead Wake: The Last Crossing of the Lusitania by Erik Larson. Part of the books tells the story of the German U-Boat that sake the Lusitania. It’s a fantastic book – very easy reading for non-fiction.

As a twelve year old, I liked Up Periscope. I re-read it recently 50+ years later. It’s a good story.
Someone already named Run Silent, Run Deep. That was another favorite as a kid.
I was trying to find an ebook recently I read as a kid called Blow Negative! It is available as a used paperback but no ebook.
I read 20,000 Leagues Under the Sea in French in High School.
I guess Hunt for Red October is my favorite.
NUMA Files series by Clive Cussler. First one is Serpant (1999.) This is a spin off of his Dark Pitt series, first one is Pacific Vortex (1982) which seems relevant to your interests too, but not quite as on the nose.
I really liked Iron Coffins! I never see it recommended, so that’s cool to see.
Not as much about the submarine but The Taking of K-129 was fascinating
