I’ve always thought it a little odd that in fantasy stories of the “magical girlfriend” type, there’s often a point where even the prickly and unpleasant ones go soft and saccharine. Which also seems to reduce the potential for conflict, plot tension, etc.

Are there any fantasy stories where the protagonist enters (and stays in) a mutual romantic relationship with a magical girlfriend who nevertheless remains unrepentantly prickly, dysfunctional, and prone to sociopathic or destructive behavior throughout?

A Deadly Education by Naomi Novik. Basically, what you are asking for except the main character is the girlfriend.

Compass Rose / Sea Wolf by Anna Burke does this well, while still developing character growth.

If you’re looking for a fantasy that’s both fun and thought-provoking, ‘Discworld’ by Terry Pratchett, beginning with ‘The Color of Magic,’ is my recommendation. Pratchett’s satirical take on fantasy tropes, combined with his incisive social commentary, makes for a highly entertaining read.
