SK has a multiverse in a bunch of his novels (even though you might not be able to put it together at first) so fans might direct you into reading his novels in a particular order.
However… I’m not an ultra-fan, so I’ll recommend a couple. It, and The Stand.

If It Bleeds, The Bazaar of Bad Dreams and The Bachman Books are great collections of shorter stories to start with.
If you’re looking to read a series, I recommend starting with either The Shining & Doctor Sleep or Mr. Mercedes, Finders Keepers & End of The Watch (and spin-offs The Outsider & Holly).
IT is a classic but lengthy read.
Rose Madder and Pet Sematary are some great examples of his older works.
11/22/63 is very outside of his typical content but I know a lot of people who have gained an interest in Stephen King after reading it.
