Are there any books where the protagonist is hunting animals, people, or trying to escape people? I am not really looking for solely man vs nature books, more of books where there’s a dynamic where they are being chased or are chasing something

The Old Man and The Sea is a classic.
The Quality of Silence by Rosamund Lupton
The Gameshouse by Claire North has a huge people chasing people element. It’s 3 novellas in one book, and while the 2nd and 3rd definitely fit, I don’t remember the first well enough to say if it has a chase element.
The First Fifteen Lives of Harry August by the same author is also people hunting people when it comes down to it, but doesn’t fit the prompt quite as neatly as the Gameshouse.
You can look up the Jim Corbett books, if you’re fine with real life accounts of hunting.
