Preferably non-fiction historical events, but all recommendations are welcome. What I would consider to be in this category that I have really enjoyed so far: Endurance, Skeletons on the Zahara, Unbroken, The Long Walk (Rawicz), In The Heart of the Sea.

I absolutely cannot recommend “Miracle in the Andes” enough.
It is exactly what you’re looking for and is an incredible book.
‘Endurance: Shackleton’s Incredible Voyage’ by Alfred Lansing is a book I always suggest for an inspiring true story of survival. It recounts Ernest Shackleton’s Antarctic expedition when his ship was trapped and crushed by ice. The crew’s fight for survival in the harshest conditions is nothing short of miraculous.

One I don’t see mentioned very often is Mawson’s Will, which is about an early Antarctic expedition that didn’t go to plan. Along similar lines to Endurance.
Touching the Void is often mentioned for good reason. 172 hours likewise.
