The Dog of the South by Charles Portis is one I think you’d like. Masters of Atlantis and Norwood by Portis, too. Hilarious writer, very underrated, and IIRC the Coen Bros have the rights to the Dog of the South screenplay (will have to fact-check me on that, though)
Coffee, Shopping, Murder, Love by Carlos Allende is a more recent novel that fits the bill. Both main characters are buffoonish idiots who don’t realize how idiotic they are, and all they do is dig themselves into deeper and deeper holes while thinking they’re criminal masterminds
