I have a few books for my Mom, but I am stumped on my Dad. He likes Harry Potter, Lord of the Rings, Game of Thrones… fantasy type stuff. Anyone have any good series recommendations?

If your dad is a big fan of Lord of the Rings, he might enjoy reading other Middle Earth books such as The Silmarillion, and Unfinished Tales / The Children of Húrin / Beren and Lúthien / The Fall of Gondolin.
There are illustrated versions by Alan Lee and/or Ted Nasmith that are beautiful.
