This came up after I rewatched Castlevania Season 2 where a group of people team up and go on an adventure to save the world and stopping/killing the dark lord.
And so I’m wondering, are there any other books like this? A dark, fantasy and magical world with maybe where characters randomly find each other, team up, face monsters and eventually face something like a dark lord?

This is basically a send up on all the party of adventurers gang up to kill the Dark Lord books.

Lord of the Rings has trilogy
The dragonlance chronicles are a shorter, fairly easy read but still quite entertaining and have many of the characteristics of something you are looking for.
