I just finished the novel Pachinko. I don’t usually read novels, but I found I was fascinated by the history of Japanese occupation of Korea as well as the stories of Koreans who moved to Japan during this time. I would love to find some non-fiction books that explore this topic more. Any suggestions would be appreciated!

I don’t have a non-fic suggestions, but you would probably enjoy Island of Sea Women if you liked Pachinko. Hope others have great non-fic for you! 🙂
When My Name Was Keoko by Linda Sue Park is listed as YA, but that’s mainly because the main character is a teenager. It doesn’t shy away at all from the brutality of the occupation. This was an eye opening book, I learned much that I wasn’t aware of and have retained long after having read it.
This may not exactly what you are looking for but Yi Sang was a famous Korean writer during the Japanese Occupation of Korea. Currently, what is available in English is [Wings](https://www.goodreads.com/book/show/1645925) and his [Selected Works](https://www.goodreads.com/book/show/53302168).
You may also enjoy [Beasts of a Little Land by Juhea Kim](https://www.goodreads.com/book/show/57151981) which is set in that time period.
In addition, there is also Packinko-esque book by Elisa Shua Dusapin titled [The Pachinko Parlour](https://www.goodreads.com/book/show/59825231).
