I am looking for a new sci-fi or fantasy book series. Looking for something complete if possible. I would prefer series with longer individual books.
Series I enjoy:
The Expanse,
The Wheel of Time,
The Stormlight Archives (and the rest of Sandersons stuff),
The Lord of the Rings
Any suggestions would be welcome.

Have you read anything by Jim Butcher? I like most of the same things you mentioned and he’s one of my favorite authors. He’s got one complete six-book fantasy series (The Codex Alera), one in-progress modern fantasy series (The Dresden Files) with 17 books out of an eventual 25 or so written, and a steampunk series (The Cinder Spires) just getting started.
The Vorkosigan Saga by Lois McMaster Bujold is a pretty great space opera and complete.
The Majipoor series by Robert Silverberg may interest you. A fine mix of fantasy and science fiction with great world building, told by a master of the genre.

Dread Empire’s Fall by Walter Jon Williams
Bujold also has two Fantasy Series. The Sharing Knife series has four books and is complete.
The World of the Five Gods books are probably complete. It’s possible she may write another novella or so but the ones that exist are complete. There’s no plot hanging out there waiting for another installment.
Since you’ve read Wheel of Time and Stormlight Archive, then you might like Malazan. It’s not an easy read due to the fact that the author simply throws you into the world and slowly reveals and explains things to you. It’s not for everyone but if you happen to like it then you’ll be in for a wild crazy ride.
