My dad loved to read but couldn’t see well enough for a few years. He just recently got cataract surgery so he is able to read again and I wanted to get him a few books for Christmas. He loved The Game of Thrones book series, Life of Pi, he read pretty much all of the Jack Reacher series. What would my fellow redditors suggest in that realm? Nothing depressing, please he is 80 and I think he would like a pleasant escape. 🙂

Bobiverse series by Dennis E. Taylor, the first book in the series is We Are Legion (We Are Bob)

*Hogfather* by Terry Pratchett. Perfect for the holiday season. There’s also a really good TV adaptation of this.
OP, please introduce your Dad to the Discworld series by Sir Terry Pratchett! I cannot recommend them enough, there’s 40+ novels for him to delight in, each one is laugh out loud funny on nearly every page. Start him off with “Mort”, it’s an excellent jumping off point and will introduce him to one of the Discs most popular characters: Death. GNU.
If he hasn’t already read The Name of the Wind, it sounds like he’d love it. High fantasy, elaborate worldbuilding, great writing – and overall a lot less violence than Game of Thrones.
