I will start by saying that I am not the target audience for ASOIAF. I still read something and enjoyed it, mainly “Hedge knight”.
What I like about the setting:
– The Grounded feel
– Arturian Knights esthetic
– Noble families
– Cool and interesting magic
– Dragons
What I disliked:
– The politics
– Detailed torture, birthing etc…
– The Grimness and ambiguity of characters and plot

You might try T Kingfisher’s Saint of Steel series
Hier the crown series. by Paul J Bennett. Booke one two and three are goo set ups for the rest of the books. But lots of knights.
For plausible, well-written and researched HF about medieval knights/warfare, you might like the *Chivalry* series by Christian Cameron. CC was educated as a medievalist, practices Armizare [medieval martial arts], and is a re-enactor.
I spent a few years reading about 11th to 14th century medieval warfare. This is an excellent series, and rings true.
