[The Bell Jar](https://www.goodreads.com/book/show/395040) by Sylvia Plath is somewhat like that. The MC’s descent is slow and creeps upon you with seemingly no notice.
The Telltale Heart is a story, but so so incredible.

Would absolutely recommend At Night All Blood is Black by David Diop! It’s a really short book that you can read in under two hours, and I must say that it is quite dark and gory. It’s about a soldier during WW1 slowly losing his mind due to the death of a friend. I highly highly highly recommend that you read it! It’s such a spectacular read, the prose is beautifully written and is very very hypnotising!

Barneys version by Mordecai Richler. the stone angel by Margaret Laurence. (maybe) My Cousin Rachel by Daphne du Maurier.
