The ones where someone needs a date for Christmas or their mother keeps pestering them so they say they have a boyfriend and have to find someone to pretend to be their date. But obviously they end up falling in love. It’s one of my favorite tropes and I’ve only read a few, so I’d love suggestions!

K A Mitchell’s Bad in Baltimore series starts off with two books of pretend relationships turned into real love. The sex scenes are explicit and frequent, don’t say I didn’t warn you!
