I can’t seem to find a book I like, I used to read a lot of YA especially queer fiction, but since realising I’m asexual I can’t be bothered with romance books, YA always feel a bit teenagery which I’m not a fan of now I’m in my 20s, I don’t much like sci fi anymore, mysteries and thrillers stress me out – I don’t really know what that leaves me with? I’d very much appreciate your wisdom! Thank you

Maybe some light and funny fantasy with a touch of philosophy? I’d suggest trying the Discworld series by Terry Pratchett. The books can be read in any order. Some good places to start are Guards! Guards! or Wyrd Sisters or Mort.
