Looking for a good/fun book where the lead isn’t the heroic, hyper-intelligent savior with plot armor. Someone that has to complete a task or save the world or whatever the plot and theme may be, but has no idea what they’re doing and is just making it up as they go.

You are looking for Jim from Mogworld by Yahtzee Croshaw. Main character is undead. Hijinks insue.
Forrest Gump. The novel, not the movie. He doesn’t save the world, of course. While the film is better, the book has enough differences in it to warrant a read.
Good Omens! The angel Aziraphale is one lovable idiot.

Gideon the Ninth, by Tamsyn Muir.
Gideon is a very competent swordswoman but that is basically the line of her prowess. Otherwise she is a snarky, lunkhead of a jock who cares very deeply for those around her even when she has no good reason to.

Not a “save the world” book but you should read Pnin by Nabokov. It’s a story about a lovable professor who is a bit of an oaf. The book is hilarious and touching.
